  1. 1/2 c. butter, softened

  2. 1 c. sugar

  3. 2 eggs, beaten

  4. 3 ripe bananas, mashed

  5. 2 c. flour

  6. 1 tsp. soda

  7. 1 pinch salt

  8. 1 c. chopped pecans

  9. 1 tsp. vanilla extract

  1. Combine butter and sugar. Cream until light and fluffy. Add eggs and bananas, mixing well. Combine dry ingredients; stir into banana mixture just until all ingredients are moistened. Stir in pecans and vanilla. Spoon batter into greased 9″x5″x3″ loaf pan. (I use Pam.) Bake at 250 degrees for 1 1/2 hours or until bread tests done. Yield: 1 loaf.
