  1. 1 small eggplant , chopped (about 2-1/4 cups)

  2. 1/3 cup chopped onion

  3. 1/3 cup chopped green pepper

  4. 1/4 cup chopped fresh parsley , divided

  5. 2 cloves garlic , minced

  6. 2 Tbsp. lemon juice

  7. 2 tsp. sugar

  8. 2 tsp. Italian seasoning

  9. 2 Tbsp. olive oil

  10. 1 large tomato , peeled, chopped (about 1 cup)

  2. kraft COOK eggplant, onion, green pepper, 3 Tbsp. parsley, garlic, lemon juice, sugar and Italian seasoning in oil in large skillet on medium heat 5 minutes.

  3. ADD tomato; simmer 5 minutes or until vegetables are crisp-tender. Spoon into serving bowl. Sprinkle with remaining parsley.

  4. SERVE immediately with crackers or refrigerate until ready to serve.
