  7. Carrots, grated

  8. Med Onion, chopped (1/2 cup)

  9. 4 Cups Vegetable stock

  10. 6 Ounces Can Tomato Paste (2/3 cup)

  11. 1 Tablespoon Soy sauce

  12. 1/2 Teaspoon Thyme

  13. 1/4 Teaspoon Ground Cumin

  14. 1/4 Teaspoon Black Pepper

  15. GARNISH: scallion curls or Herbed Garlic CroutonsIn Dutch oven or 4-5 qt saucepan, heat oil. Stir in carrots and onion; saute until tender, about 5 minutes. Add remaining ingredients, increase heat, and cover. When mixture
