  1. Crust:

  2. 1 1/4 cups graham cracker crumbs

  3. 6 tbsp. melted butter

  4. 1 tsp. ground cinnamon

  5. Filling:

  6. 224 g cream cheese, softened

  7. 392 g can sweetened condensed milk

  8. 1/2 cup fresh or bottled key lime juice

  9. Topping:

  10. 1 cup cold heavy or whipping cream

  11. 1 tbsp. sugar

  12. 1 tsp. vanilla extract

  1. For Crust:

  2. Preheat oven to 350 degrees. Stir together graham crumbs, melted butter, sugar and cinnamon in a medium bowl until evenly moistened. Press evenly into bottom and up sides of a 9 inch pie pan. Bake crust about 10 minutes until set and golden. Transfer crust to a rack and cool.

  3. For Filling:

  4. Beat together cream cheese, condensed milk, lime juice and vanilla in a large bowl until smooth. Pour filling into cooled crust. Cover and refrigerate overnight.

  5. For Topping:

  6. Combine cream, sugar and vanilla in a large bowl. Beat to soft peaks and spread evenly over top of cheesecake. Cover and refrigerate 1 hour before serving.
