  1. 3/4 lbs. plum tomatoes, chopped

  2. 1/2 C pitted Kalamata olive s, chopped

  3. 1/4 C fresh parsley , chopped

  4. 1 lb. shredded chicken

  5. 1/2 tsp. salt

  6. 1/2 tsp. pepper

  7. 2 tbsp. red wine vinegar

  8. 3 tbsp cooking oil ; plus more for brushing tortillas

  9. 4 large or 8 small tortilla s

  10. 1/2 lb. feta cheese, crumbles(about 2 cups)

  1. Heat oven to 450°. In a large glass bowl, combine the tomatoes, olives, parsley, chicken, salt, pepper, vinegar, and the 3 tbsp. of oil. Brush the tortillas with oil on both sides. Bake tortillas on a baking sheet until they start to brown, 2-3 minutes. Turn tortillas and bake 1-2 minutes longer until they are lightly browned. Remove baking sheets from oven and top each tortilla with an equal amount of the feta cheese. Return the baking sheets to the oven to cook for 1-2 minutes, until the cheese is just melting. Top the tortillas with the chicken mixture and serve.
