  1. 1 cup mashed potato flakes

  2. 1 teaspoon salt

  3. 1/4 teaspoon pepper

  4. 1 egg -- slightly beaten

  5. 1 teaspoon lemon juice

  6. 1/4 teaspoon rosemary -- crushed

  7. 2 pounds frying chicken -- cut up

  8. 1/8 teaspoon poultry seasoning

  1. Preparation : (1) Heat oven to 375 degrees. In a plastic bag, combine potato flakes, salt, pepper, rosemary and poultry seasoning. (2) In a shallow bowl combine the egg and lemon juice, mixing well. Dip he chicken into the egg mixture, drop into bag; shake in plastic bag to coat evenly with the potato flake mixture. (3) Place chicken skin side up in an ungreased pan. Bake for 60 to 75 minutes or until the chicken is tender and the crust is golden brown. (I remove the skin prior to coating and cooking to help lower the fat)
