  1. 1 tablespoon vegetable oil or water

  2. 1 large onion -- sliced

  3. 1 pound green beans -- trimmed

  4. 1 pound soft tofu

  5. 1 teaspoon paprika salt -- to taste pepper -- to taste

  1. Preparation : Heat the oil or water in a medium frying pan over medium heat. Cook the onion, stirring occasionally, until soft - about 5 minutes. Steam the green beans over boiling water until just tender, about 10 minutes. Place the onion, beans and remaining ingredients in a food processor and puree until smooth. Transfer to a serving dish and chill for 4 hours or overnight. Serve with crackers or toast. Preparation time, 30 minutes. Chilling time, 4 hours.
