  1. 12 Lo-cal crepes

  2. 1 cup 237ml Creamed cottage cheese

  3. 2 tablespoons 30ml Granulated sugar replacement

  4. 1 teaspoon 5ml Vanilla extract

  5. 1/2 teaspoon 2 1/2ml Lemon peel - grated

  6. 2 tablespoons 30ml Powdered sugar replacement

  1. Reserve crepes. Combine cottage cheese, granulated sugar replacement, vanilla and lemon peel in mixing bowl. Whip with fork until thoroughly blended. Fill each crepe with heaping 1 tblsp of cottage cheese filling, roll each one to form blintzes and place in shallow pan.

  2. Bake at 350F (175 C) for 15 minutes, or until warm. Sift the powdered sugar replacement over the blintzes.

  3. Microwave: Cook on Medium for 1 minute. Sift the powdered sugar replacement over the blintzes.
