  1. 5-8 pieces of chicken

  2. 1 large can crushed or chopped tomato es

  3. 1 small can tomato paste

  4. 2-3 Tbs olive oil

  5. 1 1/2 - 2 pepper s, green, red or yellow, sliced

  6. 2 cups mushroom s, sliced

  7. 1-2 cups zucchini or summer squash, sliced or julienned

  8. 1 medium onion , diced

  9. 2-3 cloves garlic , minced

  10. 1/2 cup white wine

  11. pepper

  12. 3 bay leaves

  13. basil

  14. thyme

  15. parsley

  16. allspice

  17. Italian Seasoning

  1. Heat olive oil in large, deep pan. Add chicken and brown on all sides. Add onions and sauté for a few minutes.

  2. Pour in the wine and let it boil up for about five minutes. Add tomatoes and paste and garlic. Add a little water if necessary to just cover the chicken. Add herbs, pepper to taste and squash.

  3. Let simmer for at least 40 minutes. Add peppers and mushrooms with about 10 minutes remaining.

  4. Serve over rice. Brown rice or Jasmine rice is particularly nice.
