  1. 1 1/2 cups organic flour (1/2 cup whole wheat, the rest unbleached flour)

  2. 1 cup turbinado organic sugar

  3. 2 teaspoons double acting baking powder

  4. 1/2 teaspoons baking soda

  5. 1/4 teaspoon sea salt

  6. 1 cup organic yogurt or sour cream

  7. 2 organic eggs

  8. 1 teaspoon of vanilla

  9. 2 teaspoons lime or lemon juice For the Streusel Mixture:

  10. 2 tablespoons organic flour

  11. 2 tablespoons butter

  12. 5 tablespoons sugar

  13. 1/2 teaspoon cinnamon

  14. 1 teaspoon cardamom

  15. 1/4 teaspoon fresh grated nutmeg

  16. 1/2 cup organic walnuts, chopped Sliced local apples or any in season fruit Cooking spray or butter for coating

  1. FOR THE STREUSEL: Blend streusel ingredients up to nutmeg until crumbled. FOR THE CAKE: Preheat oven to 350 degrees F. Have all ingredients at room temperature (make the streusel first while other ingredients come to room temperature). Sift before measuring flour. Sift flour, turbinado sugar, baking powder, baking soda, and sea salt Combine well and beat yogurt or sour cream, eggs, vanilla, and lime or lemon juice. Add sifted ingredients to the cream mixture. Beat until smooth. Spread in 9 by 9 inch lightly greased pan. Sprinkle with streusel, 1/2 cup of chopped nuts and apple slices that are drizzled w/ a bit of lime juice. Gently run knife thru streusel batter. Bake for approximately 20 minutes until knife sticks in and comes out clean.
