  2. 1 tablespoon lemon juice

  3. 1/4 cup butter

  4. 1 teaspoon fresh dill , tarragon or oregano OR 1/4 teaspoon dried dill weed, tarragon or oregano.

  1. Wash artichokes, trim stems and remove loose outer leaves. Cut off 1 inch from each top and snip off sharp leave tips; brush cut edges with a little lemon juice.

  2. Bring a large pot of lightly salted water to a boil; add artichokes and return to boiling. Reduce heat and simmer, covered for 20-30 minutes, or til leaf pulls out easily. Drain artichokes upside down on paper towels.

  3. For butter sauce, melt butter, desired herb and lemon juice.
