  1. 1 lb 454g / 16oz Boned and skinned chicken breast halves

  2. 3/4 cup 177ml Bread - whole wheat

  3. 1/4 teaspoon 1 1/3ml Salt

  4. 1/4 teaspoon 1 1/3ml Freshly ground pepper

  5. 2 tablespoons 30ml Prepared horseradish

  6. 1 tablespoon 15ml Dijon mustard

  7. 1/4 cup 59ml White wine

  1. Preheat oven to 350 degrees. Cut meat into 4 portions.

  2. On a plate mix together the bread crumbs, salt and pepper.

  3. In a bowl stir together the horseradish, mustard and wine.

  4. Dip chicken in the horseradish mixture until well coated. You can marinade for up to 1 hour for a stronger flavor.

  5. Roll the chicken in the breadcrumbs to coat evenly. Place pieces in a casserole (not glass). Don't let the pieces touch.

  6. Bake uncovered for 25-30 minutes until firm to the touch.
