  8. 1 small onion -- finely chopped

  9. 1 tablespoon butter

  10. 1 tablespoon flour

  11. 1/2 cup yogurt

  12. 5 medium cooked beets -- peeled and shredded

  13. 3 tablespoons horseradish -- or to taste

  14. 12 teaspoons sugar

  15. salt

  16. pepper -- freshly ground

  17. 2 tablespoons parsley -- chopped

  18. Saute the onion in the butter for three to five minutes. Stir in the flour.

  19. Add the yogurt and heat to just below the boiling point.

  20. Add the beets, horseradish and sugar, and heat thoroughly. Season with salt

  21. and pepper to taste and sprinkle with the parsley
