  1. 1 medium onion

  2. 2 cloves minced garlic

  3. 1 tablespoon olive oil

  4. 4 to 6 medium, seeded and chopped

  5. 1/2 teaspoon salt

  6. 1/4 teaspoon red pepper

  7. 4 cups arugula (rinsed)chopped

  8. 1/4 c pine nut s

  9. 1/4 c crumbled gorgonzola or parmesan cheese

  1. Cook pasta. Drain; keep warm. In a large skillet cook onion and garlic in hot oil over medium until onion is tender. Add tomato, salt and red pepper. Cook and stir about 2 minutes, stir in arugula; heat until greens are wilted. Top pasta with mixture; sprinkle with pine nuts and cheese.
