  1. Salad

  2. 5 cups torn lettuce

  3. 2 1/2 cups broccoli florets

  4. 2 cups julienne-cut carrots

  5. 1 can (15 oz) chick peas or garbanzo beans, drained, rinsed

  6. 1 small red onion, thinly sliced

  7. Dressing

  8. 3/4 cup mayonnaise or salad dressing

  9. 1/3 cup milk

  10. 1/2 cup grated Parmesan cheese

  11. 2 tablespoons chopped fresh parsley

  1. In 3-quart glass bowl with straight sides, layer lettuce, broccoli, carrots, beans and onion slices.

  2. In small bowl, mix all dressing ingredients except parsley until well blended. Spread dressing evenly over salad. Sprinkle with parsley. Serve immediately or cover and refrigerate several hours or overnight.

  3. If you don't have the large glass bowl, the salad can be layered in a 13x9-inch (3-quart) glass baking dish instead.
