  2. Jalapeno Mustard

  5. 2 Tsp Whole Coriander Seeds

  6. 1/4 Cup Whole Yellow Mustard Seeds

  7. 1 Small Onion -- peeled & chopped

  8. 1/4 Cup Whole Black Mustard Seeds

  9. 2 Small Jalapeno Peppers -- Stemmed & Seeded

  10. 1/4 Cup Dry Powdered Mustard

  11. 1/4 Cup Cider Vinegar

  12. 3/4 Cup Cold Water

  13. 1/4 Cup Dry White Wine

  14. 3 Cloves Garlic -- Peeled & Chopped

  15. Toast the coriander seeds in a dry skillet.

  16. Slightly crush the two types of mustard seeds and the

  17. coriander seeds in a mortar or a blender.

  18. Mix the crushed seeds with the water.

  19. Let stand for at least 3 hours.

  20. Combine the remaining ingredients in the blender.

  21. Puree until smooth.

  22. Stir the puree into the mustard mixture.

  23. Bring the mixture to a boil.

  24. Reduce the heat.

  25. Simmer until the mixture is the desired thickness

  26. 5 minutes

  27. NOTE: The mustard will thicken slightly as it cools.

  28. Store refrigerated and tightly covered.
