  2. 1 medium-sized chicken

  3. 2 large carrots -- diced

  4. 2 celery stalks -- diced

  5. 1 Tablespoon chopped parsley

  6. 1 teaspoon salt

  7. 1/2 teaspoon black pepper

  1. Rinse and place whole chicken in 4-5 quart pot full of water. Bring to boiland simmer gently for 1 hour, then remove from stove and place over night inthe refrigerator. The following day spoon solidified chicken fat from thetopof the pot, remove chicken, de-bone and cut into 1-inch square pieces whilebroth is heating. Bring to boil, add chopped carrot, celery, salt, pepperandparsley, then simmer for 30 minutes. Return diced chicken to pot for anadditional 10 minutes and serve.
