  7. 3 Oz Cauliflower florets

  8. 3 Oz Carrots, julienned

  9. 1 Green pepper, diced

  10. 4 Oz Green peas

  11. 4 Oz Almonds

  12. 2 Oz Cashews

  13. 1 Md Onion, chopped

  14. 1/2 C Water

  15. 1/2 C Vegetable oil

  16. 2 Ts Black pepper

  17. 2 Ts Chili powder

  18. 1 Lg Potato, boiled & diced

  19. 1 Lg Tomato, diced

  20. 2 Ts Mint

  21. Salt, to taste

  22. Into a pot of boiling water, drop the cauliflower, carrots, bell

  23. 3 to 5 minutes. Drain the

  24. vegetables and plunge them into a bowl of ice water to stop cooking. Set

  25. aside.

  26. Grind the almonds, cashews, and onions with water to create a smooth

  27. paste. In a pan, heat the oil until smoking, add the nut paste and 2 to 3 minutes. Add the pepper and chili powder, then the

  28. blanched vegetables. Add the potatoes, tomatoes, and paneer (homemade

  29. cheese). Continue stirring while heating through. Add mint and salt.
