  1. 2 tb Light olive oil

  2. 1 1/2lb Boneless skinless chicken br

  3. 12 oz Mushrooms cut up

  4. 1 tb Minced garlic

  5. 1/2ts Salt

  6. 1/4ts Pepper

  7. 1 tb Butter or margarine

  8. 1/4c Chopped parsley

  9. 1/4c Chicken stock

  1. + Directions : HEAT THE OIL IN A WOK or large skillet over high heat. Reduce the heat to medium high, add the chicken cubes and mushrooms and stir-fry, stirring constantly, for 3 minutes. Add the garlic, salt and pepper to the pan, and continue to stir-fry for 3 minutes more, stirring constantly, or until the chicken cubes are cooked through. Add the butter, parsley and chicken stock to the pan, stir-fry for 1 minute, and serve immediately.
