  1. 1 Salmon fillet deboned

  2. Olive oil

  3. black pepper

  4. salt

  5. 1/2 cup Reduced-fat or fat-free mayonnaise

  6. 1/2 cup Reduced-fat or fat-free sour cream

  7. 2 tsp. Lemon juice

  8. 2 tbsp mustard

  9. 1 1/2 tbsp dill weed

  10. 1 1/2 tbsp parsley flakes

  1. Wash salmon fillet under running water, pat dry with paper towels. Brush both sides of fillet with olive oil, season with salt and pepper. Place fillet skin side down on aluminum foil, grill until salmon is opaque throughout. Mix remaining ingredients together, pour over salmon fillet or serve on the side. Yield: serves 2 Notes: Instead of grilling, the salmon fillet can be baked at 350 degrees on a broiling rack. Spray the broiling rack with cooking spray, place fillet skin side down on rack and bake for 20-25 minutes, or until fillet is opaque throughout.
