  1. --BH&G HERITAGE COOKBOOK-- 1 pt Rpose flour

  2. 1 1/4 c Sugar

  3. 2 1/2 ts Baking powder

  4. 1 ts Salt

  5. 1 c Milk

  6. 1/2 c Shortening

  7. 2 Eggs

  8. 1 ts Vanilla

  9. 3/4 cup of the milk and the shortening. Beat

  10. 2 minutes on medium speed of electric mixer. Add remaining milk, eggs, and vanilla. Beat

  11. 2 minutes more. Pour batter into 2 greased and floured

  12. 8 x 1 1/2-inch round baking pans. Bake at

  13. 350 for 35 to 40 minutes. Cool

  14. 5 minutes; remove from pans. When cool, fill and frost with Maple Frosting. MAPLE FROSTING: In saucepan cook

  15. 1 1/4 cups pure maple syrup to soft ball stage (238). Gradually add the hot maple syrup to

  16. 2 stiffly beaten egg whites, beating constantly with electric mixer. Stir in

  17. 1/4 cup sifted powdered sugar and beat till well blended. --
