  2. JENNY'S CHRISTMAS CAKE

  6. 10 oz Wholewheat flour

  7. 1 1/2 lb Dried Mixed Fruit

  8. 4 oz Glace Cherries

  9. 2 oz Chopped Walnuts

  10. 2 oz Chopped Almonds

  11. 2 ts Baking Powder

  12. Nutmeg

  13. 1/2 ts Salt

  14. 8 oz Butter

  15. 5 Eggs (4-6)

  16. 3 tb Molasses (2-4)

  17. 1 lemon

  18. 1 Grated rind of

  19. 1 orange

  20. 8 oz Demerera Sugar

  21. LOTS of ALCOHOL

  22. -about half bottle of rum

  23. -or brandy or both

  24. 1/4 pt Guiness

  25. Mix the fruit and alcohol together and leave to soak

  26. for 3 days minimum. Add cherries and nuts to mixture.

  27. Mix flour, baking powder, spices and salt together.

  28. Cream the butter, and sugar, when light and fluffy

  29. beat in molasses and then eggs one at a time.

  30. Fold in half of the flour mixture followed by the

  31. fruit and alcohol mixture. Then fold in the remainder

  32. of the flour. Bake in lined tin wrapped in newspaper

  33. and secure tin with string. Bake at Gas 3 for first

  34. 2 for a further

  35. minutes. When cooked sprinkle cake with alcohol. Keep

  36. wrapped in foil and every so often sprinkle with
