  1. 2 1/2 pounds beef stew meat Salt and Pepper to taste

  2. 1 Tbsp. canola oil

  3. 1 1/4 c. beef stock

  4. 4 c. tomato juice

  5. 2 1/2 c. cubed potato es

  6. 1 clove garlic, minced

  7. 1 bay leaf

  8. 2 c. frozen sliced carrot s

  9. 1 1/4 c. frozen green bean s

  1. Season beef with salt and pepper. In large dutch oven or stockpot, add oil and brown beef on all sides. Reduce heat to medium low, add beef stock and simmer until beef is tender (about 45 minutes). Add potatoes, garlic, tomato juice and bay leaf. Bring to a boil, the reduce heat to medium; lightly boil until potatoes are almost tender. Add carrots, green beans, and corn. Cook an additional 10-15 minutes until vegetables are warm. Remove bay leaf and serve.
