  1. 6 Chicken breast halves

  2. 3 tablespoons 45ml Paprika

  3. 1 Salt and pepper to taste

  4. 3 tablespoons 45ml Chopped shallots

  5. 1/4 cup 49g / 1.7oz Butter

  6. 2 cups 474ml Champagne

  7. 3 cups 711ml Heavy cream

  1. *Skin and debone breasts before cooking *

  2. Sprinkle the chicken with paprika, salt and pepper. Place in a casserole dish and add the shallots, butter and champagne. Cover and place in a 350F oven for 15 minutes. Remove chicken to serving plate and keep warm. Reduce cooking liquid by 2/3 over medium heat and then pour in the heavy cream, stirring until thickened. Strain the sauce over the warm chicken breasts and serve immediately.
