  1. Pennsylvania Dutch Shoo-fly Pie

  2. pastry for a one-crust, 9" pie

  3. 1/2 cup molasses

  4. 1 teaspoon soda

  5. 1 cup boiling water

  6. pinch salt 1 1/2 cups flour

  7. 1 cup brown sugar

  8. 3/4 cup butter or lard

  9. 1/2 teaspoon cinnamon

  10. Dissolve the soda in the molasses and stir until it foams. Add

  11. the boiling water and salt.

  12. Mix the flour, butter, sugar and cinnamon into crumbs.

  13. 1/3 of the liquid into the unbaked crust. Sprinkle

  14. 1/3 of

  15. the crumbs over the liquid. Continue with alternating layers,

  16. putting the final 1/3 of the crumbs on top.

  17. 375degF oven for about 1/2 an hour until the crumbs and crust are golden.
