  1. 400 ml Greek yogurt

  2. 1/2 cucumber , seeds removed and finely diced

  3. 2 tbsp chopped coriander , or mint

  4. 1/2 tsp freshly ground salt and black pepper , or to taste

  5. 4 tomatoes , chopped

  1. Tip the yogurt into a bowl and add the cucumber, coriander, salt and pepper, and, tomatoes, if you're using them. Serve the raita chilled.
