  1. 3 cups flour

  2. 4 tsp baking powder

  3. 1 tsp salt

  4. 3 tsp cinnamon

  5. 1 banana

  6. 1 cup turbinado sugar

  7. 2 tsp vinegar

  8. 2 tsp vanilla extract

  9. 3 cups zucchini , grated

  10. 1 cup raisin s

  11. 1 cup chopped nuts (I use a different combination every time - pumpkin seeds, almonds, hazelnuts, whatever I feel like at the time - it's a great way to change up the recipe)

  12. 1/2 cup water

  1. Preheat the oven to 350 degrees. In a large bowl, sift together the flour, baking powder, salt and cinnamon. Add the banana, sugar, oil, vinegar, and vanilla, and mix. Stir in the zucchini, raisins, nuts and mix together gently until “just mixed”. Add a little water if the dough seems too dry. Spoon the batter into two lightly oiled loaf pans and bake for 45-50 minutes. Test with a knife to see if done. Cool for 10 minutes for slicing and serving. Makes 2 loaves.
