  1. Dream Peach Pie

  2. basic pie crust for single crusts

  3. 1 cup sugar

  4. 6 tablespoons cornstarch

  5. 2 cups mashed fresh peaches

  6. 1 cup water

  7. 1 package (3 oz.) cream cheese, softened

  8. 1/4 cup powdered sugar

  9. 3/4 cup frozen whipped topping, thawed

  10. 1 cup peeled sliced fresh peaches

  11. whipped cream, optional

  12. Prepare and bake pie crust in a 9 inch pie pan.

  13. In a heavy saucepan, stir together sugar and cornstarch. Stir in

  14. mashed peaches and water. Cook over medium heat, stirring constantly,

  15. until the mixture comes to a boil and begins to thicken. Reduce

  16. the heat to low and simmer, stirring constantly, 1 minute. Cool

  17. mixture while making the rest of the filling.

  18. In a medium bowl, beat the cream cheese and powdered sugar with an

  19. electric mixer until fluffy. Fold in whipped topping.

  20. Spread cream cheese mixture in cooled pie shell. Arrange fresh

  21. peach slices over the cream cheese mixture. Spoon on cooled peach mixture. Refrigerate 3 hours or longer, serve with whipped cream,

  22. 1 9-inch pie,

  23. 8 servings.
