  1. 6 slices bacon

  2. 5 carrots, diced

  3. 4 potatoes, diced

  4. 1 large onion, chopped

  5. 1/2 teaspoon dried basil

  6. 1/4 teaspoon dried thyme

  7. 6 cups chicken broth Sour cream

  1. Preparation : Bacon adds a smoky depth to the refreshing taste of carrots. Let loose your artistic flare with a dollop of sour cream. Combine all the ingredients except the sour cream in the slow cooker. Cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours. Transfer to a blender or food processor, and pure in batches until smooth. Return to the slow cooker, and cook for an additional 30 minutes on HIGH; serve with sour cream.
