  1. 1 1/2 cups 93g / 3 1/3oz Flour

  2. 1 Yeast

  3. 1 Salt

  4. 3/4 cup 177ml Water

  5. 16 Anchovy fillets

  6. 6 cups 1422ml Oil

  1. Mix flour, yeast, salt, and water. Let rest in refrigerator. After dough rests for about 2 hours, divide dough into 16 pieces.

  2. Place an anchovy in your palm. Fold dough over and make a ball. In heavy pot, heat oil. Add to hot oil and cook until golden brown.

  3. This recipe yields 16 zeppole.
