  2. 1 c Cooked black beans

  3. 1 c Chopped tomatoes

  4. 1/2 c Cheddar cheese, shredded; op

  5. 1 tb Fresh parsley; snipped

  6. 1/4 c Low calorie italian salad dr

  7. 1 tb Fresh lime juice

  8. Lettuce leaves

  1. Leftover black beans and rice combine to make a great lowfat, low cholesterol salad.

  2. Combine rice, beans, tomato, cheese (if desired), and parsley in large bowl.

  3. Pour dressing and lime juice over rice mixture; toss.

  4. Serve on lettuce leaves.
