  2. MEXICAN PIZZA WITH SALSA

  7. 1/2 Recipe basic bread dough

  8. - that has risen once

  10. Oil and cornmeal for pan

  12. 2 tb Light-tasting olive oil

  13. 4 oz Chorizo -- (See NOTE)

  14. -ÿÿOther spicy sausage

  15. 1 lg Clove garlic -- minced

  16. 1 md Spanish onion

  17. - cut into small dice 3/4 c Shredded Monterey Jack

  18. 3/4 c Shredded Muenster cheese

  19. 3 tb Minced cilantro

  20. 2 Green onions -- thinly sliced

  21. Salsa -- (well drained)

  22. Cilantro leaves

  23. PREHEAT OVEN TO 425F with rack in lower area of oven.

  24. Oil a round pizza pan, preferably black steel;

  25. sprinkle lightly with cornmeal. Set aside. Roll dough

  26. into circle, roughly 11 inches in diameter, letting

  27. dough relax a few minutes if it keeps withdrawing.

  28. Place in prepared pan, gently stretching it back to

  29. size once it's in the pan. Prick dough with fork. Heat

  30. oil in 7-inch skillet over medium high heat. Remove

  31. casing from sausage; crumble meat into 1/2-inch

  32. chunks. When oil is hot, add sausage, garlic and onion

  33. to pan. Cook until onion is softened, about 4 minutes,

  34. stirring often. Spread mixture on dough leaving

  35. 1/2-inch margin. Sprinkle

  36. 1/2 cheese over. Bake for minutes. Sprinkle remaining cheese over. Bake until

  37. this cheese has melted and dough is deeply browned,

  38. about 3 minutes more. Remove from oven. Sprinkle with

  39. minced cilantro and green onions. Cut into wedges.

  40. Garnish each wedge with drained salsa and cilantro

  41. leaves. Serve hot. - - - - - - - - - - - - - - - - - -
