  1. 1/2 cup 31g / 1.1oz Chopped onion

  2. 2 teaspoons 10ml Margarine

  3. 4 cups 948ml Low sodium chicken broth

  4. 2 cups 220g / 7.8oz Carrots - sliced (medium)

  5. 2 cups 292g / 10oz Potatoes - diced (medium)

  6. 1 cup 160g / 5.6oz Green beans - cut up

  7. 1 tablespoon 15ml Fresh parsley - chopped

  8. 1 teaspoon 5ml Dried tarragon leaves

  9. 1/4 teaspoon 1 1/3ml Black pepper

  10. 40 Fat free saltine crackers

  1. Recipe Instructions In a medium sauce pan, over medium-high heat, cook onions in margarine until tender. Add chicken broth, carrots, potatoes, green beans, parsley, tarragon and pepper. Heat until boiling; reduce heat. Simmer for 20 minutes or until vegetables are tender. Serve hot with crackers.
