  1. Preheat the oven to 350 degrees, and brown the ground beef. Drain. Meanwhile, prepare the produce and shred the cheddar if needed. In a two quart casserole dish, layer the ingredients, beginning with a layer of beef, then beans, then salsa, then cheese, and finally a light layer of the lettuce and tomatoes (and the olives if using), followed by a tortilla. Trim down the tortillas to fit the baking dish. Continue layering the same way until the dish is full, making sure to end in a tortilla. Add a final sprinkling of cheese, adding a bit of lettuce, tomatoes, and olives if desired. Bake in the oven for approximately 30 minutes, finishing with a few minutes of broiling for extra browning if desired. Serve with the sour cream and/or guacamole if desired.
