  1. 6 tablespoons unsweetened pineapple juice

  2. 3 tablespoons cider vinegar

  3. 2 tablespoons water

  4. 2 tablespoons chicken broth

  5. 2 tablespoons canola oil

  6. 1 tablespoon minced fresh basil or 1 teaspoon dried basil

  7. 1 teaspoon sugar

  8. 1/2 teaspoon garlic powder

  9. 2 bunches romaine or red leaf lettuce, torn (about 12 cups)

  10. 1 can (11 ounces) mandarin oranges, drained

  11. 1/3 cup sliced almonds, toasted

  1. In a jar with a tight-fitting lid, combine the first eight ingredients; shake well. In a large salad bowl, combine the lettuce, oranges and almonds. Add dressing and toss to coat. Serve immediately. Yield: 8 servings.
