  8. 1 Large Celery Root -- peeled

  9. 3/4 Cup Mayonnaise (Homemade Preferred)

  10. 1/3 Cup Buttermilk

  11. 3 Tablespoons Whole Grain Mustard

  12. 1 1/2 Tablespoons Smooth Dijon Mustard

  13. 2 Tablespoons Fresh Lemon Juice

  14. 2 Teaspoons Sherry Or Brown Rice Vinegar

  15. Salt And Freshly Ground Pepper

  16. --Garnish--

  17. Savory young greens such as arugula

  18. Sieved Hard Boiled Egg

  19. Chopped Chives.

  20. Finely julienne the celery root by hand or with a mandoline or similar

  21. cutter and set aside in a bowl. In a separate bowl mix together the

  22. mayonnaise, buttermilk, mustards, lemon juice and vinegar until smooth. Stir

  23. in celery root to evenly coat and season to taste with salt and pepper.

  24. To serve: Place greens attractively on chilled plates. Mound salad on top

  25. and sprinkle sieved hard boiled egg and chives over top.

  26. 6 cups or 6 to 8 servings
