  1. 1 tablespoon virgin olive oil

  2. 1/2 tablespoon unsalted butter

  3. 1 leek, trimmed of damaged leaves, cleaned, and cut into 1 medium onion, peeled and coarsely chopped

  4. 2 carrots, peeled and cut into 1 zucchini, trimmed and cut into 3/4 inch pieces

  5. 4 mushrooms, coarsely chopped

  6. 1 yam, Peeled and cut into 1/2 inch pieces

  7. 7 cups water

  8. 1 teaspoon salt

  9. 1/4 teaspoon freshly ground black pepper

  10. 1 cut vermicelli (angel hair pasta) or very thin noodles

  1. Heat the oil and butter in a saucepan. When hot, add the leek and onion, and sate for 2 minutes. Then add the carrots, zucchini, mushrooms, and yam, and mix well. Add the water, salt, and pepper.

  2. Bring to a boil, cover, reduce the heat, and boil gently for about 12 minutes.

  3. Add the pasta. Bring back to a boil, and cook, covered, for about 4 minutes. Serve
