  1. 1 cup water

  2. 1 cup Bulgar wheat

  3. 1/4 cup lime juice

  4. 1/4 cup olive oil

  5. 1 cup grape tomatoes , sliced in half

  6. 1/2 red bell pepper , diced

  7. 3 green onions , sliced

  8. 1/2 cup cilantro , chopped

  9. 1/2 cup feta cheese

  10. 1/2 cup baby carrot, sliced

  11. 2 large radishes , sliced

  12. 2 garlic cloves , chopped

  13. 1 teaspoon cumin

  1. Boil the water and then pour over the bulgur wheat.

  2. Cover and allow to sit for about 1 hour.

  3. Add lime juice and olive oil, then refrigerate.

  4. Once chilled add the veggies and cumin.

  5. Stir gently and serve chilled.

  6. All vegetable amounts are appoximate. Use however much you prefer.
