  1. 2 large handfuls hay

  2. 2 plate sized snapper, gutted and scaled

  3. Sea salt and freshly ground black pepper

  4. 300g chat potatoes

  5. Vegetable oil, for deep-frying

  6. Juice of half a lemon

  7. 2 tablespoons white wine

  8. 1 tablespoon chopped parsley

  9. 50g cold butter, diced

  1. Preheat oven to 180C or 160C fan-forced.

  2. Place half of the hay in the base of a large heavy based casserole pot with a lid. Top with fish; season with salt and pepper and top with remaining hay. Cover with lid.

  3. Bake in preheated oven 25 minutes or until fish is cooked as desired.

  4. Meanwhile, boil chat potatoes until just tender; drain well and squash gently with fist or flat-side of heavy bladed knife. Heat oil in large wok, saucepan or deep-fryer; deep-fry potatoes until golden brown, drain on absorbent paper.

  5. Combine juice, wine, salt and pepper and parsley in a small frying pan over medium heat. Once mixture boils, add butter a few cubes at a time swirling the pan constantly to make a sauce.

  6. Remove fish from oven and carefully lift from its layers of hay. Place on a serving dish; serve with sauce and deep-fried chat potatoes.
