  1. 210g plain flour

  2. 200g yellow cornmeal

  3. 1 tbsp baking powder

  4. 1 tsp sugar

  5. 500ml milk

  6. 3 tbsps vegetable oil

  7. 2 large eggs

  8. Spicy chilli, recipe follows

  9. Shredded cheddar, for garnish

  10. Sour cream, for garnish

  11. Chopped fresh coriander leaves, for garnish

  12. 500g lean beef mince

  13. 1 onion, chopped

  14. 1 green capsicum, chopped

  15. 2 cloves garlic, minced

  16. 2 tbsps chilli powder

  17. 1 tbsp ground cumin

  18. 1 tsp salt

  19. 1 tbsps fresh ground black pepper

  20. 2 (425g) tins ranch-style beans

  21. 1 (425g) tin tomato sauce

  22. 1 (425g) tin niblet corn, drained

  23. 1 (280g) tin diced tomatoes and green chiles

  1. Cornmeal waffles with spicy chilli For the waffles and spicy chili:

  2. 1) Preheat waffle iron according to manufacturer's instructions.

  3. In a large bowl, combine flour, cornmeal, baking powder, sugar, and salt. Add milk, oil, and eggs; stirring until smooth. Pour batter onto hot waffle iron and bake in batches. Set aside and keep warm.

  4. Serve with the spicy chili. Garnish with shredded cheddar, sour cream and chopped fresh cordiander.

  5. For the spicy chili:

  6. 1) In a large Dutch oven over medium-high heat, brown ground chuck, until beef is crumbly. Stir in onion, bell pepper, garlic, chili powder, cumin, salt and pepper.

  7. Stir in beans, tomato sauce, corn, diced tomatoes, and green chiles. Reduce heat and simmer 30 minutes uncovered, stirring occasionally.

  8. Yield: 10 to 12 servings
