  1. 500g (1lb2oz) minced pork

  3. 350g (12oz) shredded suet

  4. 225g (8oz) fresh breadcrumbs

  5. 2 lemons , zested

  6. 1 tbsp rosemary, picked and chopped

  7. 1 tbsp sage leaves, chopped

  8. 1 tsp freshly grated nutmeg

  9. 1 egg , beaten

  10. salt and black pepper

  11. A little flour for coating

  12. 50g (2oz) goose fat , butter or oil for frying

  13. 8 slices middle cut smoked bacon

  14. 4 tomatoes , halved

  15. 110g (4oz) butter

  16. 8 large portobello mushrooms , peeled

  17. 2 tbsp vegetable oil

  18. 4 eggs

  19. 1 loaf white or brown bread , thickly sliced

  20. 1 jar oxfordshire honey

  21. 1 jar oxford marmalade

  1. Method for sausages Place the minced meats, suet, breadcrumbs, lemon zest, nutmeg and herbs in a large bowl and mix well.

  2. Add the egg and mix once more.

  3. Flour the board and your hands, then take a small ball of mixture and roll into a sausage shape.

  4. Coat each sausage with a little flour then shape into a C.

  5. Heat a frying pan until hot, add the goose fat and sausages, a few at a time, and cook over a gentle heat for 6-8 minutes until golden brown and cooked through.
