  1. 395g can condensed milk

  2. 1 cup (220g) caster sugar

  3. 125g butter, chopped

  4. 2 tbs liquid glucose or corn syrup

  5. 100g white chocolate, finely chopped

  6. 1/2 cup (75g) pistachio kernels

  7. 1/2 cup (75g) craisins (dried cranberries)

  8. pink cochineal or red food colouring

  1. Line a 4 1/2 x 7 1/2 x 25cm bar pan with non-stick baking paper. Combine condensed milk, caster sugar, butter, and glucose/corn syrup in a large heatproof, microwave-safe bowl. Cook uncovered, on medium-high/70 per cent power, stirring every 2 minutes for 6-8 minutes or until mixture begins to boil.

  2. Stir in white chocolate, pistachio kernels and craisins until chocolate has melted.

  3. Add a few drops of colouring and stir until combined. Pour into pan and smooth the surface. Refrigerate for 2 hours. Cut into pieces.
