  1. 3 chorizo sausages , chopped into small pieces

  2. splash cider vinegar

  3. splash medium dry sherry

  4. 1/3 red chilli , finely chopped

  5. 2 discovery apples , chopped into small pieces

  6. 2 garlic cloves , minced

  7. splash extra virgin olive oil

  8. 410g tin of haricot beans

  9. 1/2 lemon

  10. small handful parsley , roughly chopped

  1. Fry the chorizo and then put to one side. Deglaze the frying pan with a splash of cider vinegar and a little sherry.

  2. Gently fry the chilli, apple, and garlic in a little olive oil, then add the beans and chorizo to warm through.

  3. Squeeze the juice from ½ a lemon over the mixture and season with salt and pepper. Roughly chop some parsley, sprinkle over and serve.
