  1. Mix cold butter and sugar until light and fluffy. Beat in egg yolks, then egg and vanilla extract, if using.

  2. Add flour, baking powder and salt and mix until the dough forms a ball. Wrap in cling wrap and refrigerate for 30 minutes.

  3. Mix Nutella and cinnamon in a small bowl.

  4. Form a ball with 2 teaspoons of dough by rolling it between the palms of your hands.

  5. Place about 1/2 teaspoon of Nutella in the middle, then bring the edges of the dough up and around the filling and pinch closed.

  6. Roll the dough again between your palms until a sphere is formed, then place on a parchment-lined cookie sheet. Repeat with remaining dough.

  7. Bake at 350°F for 15 minutes in a preheated oven. Cool and decorate as follows:

  8. Melt the chocolate chips and butter in the microwave on high in 15 second intervals, stirring after each 15 seconds. This should take about 3 intervals before the chocolate chips are smooth and hot.

  9. Spoon the melted chocolate into the bottom corner of a sandwich bag. Close the bag. Cut off a very small corner of the bag and squeeze the chocolate through the hole to drizzle in an attractive pattern onto the cookies. You can view a video that uses this technique here.

  10. After the cookies have cooled, store them in an airtight tin between layers of wax paper. You may also freeze them.
