  1. 3 lbs uncooked boneless chicken breasts

  2. 1 red bell pepper , chopped

  3. 1 green bell pepper , chopped

  4. 1 medium onion , chopped

  5. 1 cup celery , chopped

  6. 1 (16 ounce) can diced tomatoes

  7. 1 (7 ounce) can drained sliced mushrooms

  8. 1 teaspoon sugar

  9. 1 teaspoon cajun seasoning

  10. 1/2 teaspoon paprika

  11. 1 teaspoon garlic powder

  12. hot sauce, to taste

  13. salt and pepper, to taste

  14. cooked brown rice

  1. Place raw chicken in the bottom of a Crock Pot.

  2. Combine all other ingredients except rice and pour over chicken. Do not stir.

  3. Cover with lid and simmer on low for 7 to 8 hours or on high for 4 to 5 hours. Stir chicken before serving over cooked rice.
