  1. 2 cups milk

  2. 1 cup desiccated coconut

  3. 1 cup caster sugar

  4. 125g butter, melted

  5. 4 eggs, lightly beaten

  6. 1/2 cup plain flour, sifted

  7. 2 teaspoons vanilla extract

  8. Icing sugar for dusting and whipped cream, to serve

  1. Preheat oven to moderate, 180°C. Lightly grease a 23cm round pie plate.

  2. In a large bowl, using a wooden spoon, mix together all ingredients.

  3. Pour mixture into prepared pie plate.

  4. Bake for 55-60 minutes until set. Dust with icing sugar. Serve in wedges with whipped cream.
