  1. 250 ml rice vinegar

  2. 200 g shallots

  3. 200 g carrots , sliced

  4. 200 g cucumbers , sliced

  5. 2 green chilies , sliced

  6. 2 red chilies , sliced

  7. 1 teaspoon salt

  8. 4 tablespoons sugar

  1. Put the vinegar in a pan and heat it.

  2. Add the sugar & salt and stir to dissolve both into the vinegarLet the mixture cool.

  3. Meanwhile, put the sliced vegetables in a bowl.

  4. Now cover the vegetables with the vinegar and leave for about half an hour.

  5. Your mixed vegetable pickle is ready to be served.
