  1. 2 lbs clean scrubbed red potatoes

  1. Place the potatoes in the bottom of a large cast iron skillet.

  2. Place about 2 tablespoons of water in the bottom of the pot and sprinkle with the salt.

  3. Cover tightly and place over low heat.

  4. Cook for 40-50 minutes.

  5. Do not lift the lid during this time.

  6. Occasionally give the pan a shake.
