  1. 2 tablespoons extra virgin olive oil

  2. 4 tablespoons butter

  3. 2 eggs

  4. 4 ripe green tomatoes (or striped heirloom)

  5. 1 cup Italian seasoned breadcrumbs

  6. 1/4 cup parmesan-romano cheese mix , grated

  7. 1 tablespoon fresh coarse ground black pepper

  8. 2 teaspoons kosher salt (or to your taste, start small)

  1. In a quart storage bag mix bread crumbs, cheese, salt & pepper.

  2. Beat eggs or mix 'em all up in a bag of their own until well blended.

  3. Slice tomatoes about 1/2" thick & place in egg, remove & place in bread crumb mixture individually and shake until well coated.

  4. Heat butter & oil over medium, fry tomatoes until lightly browned & just crispy, about 3 minutes per side - don't burn!

  5. Devour. I promise these will not disappoint!
