  1. 2 lb boneless, skinless chicken breasts, cut in

  2. 1 1/2-inch cubes

  3. 2 small red onions , peeled and sliced

  4. 2 bell peppers cleaned and sliced

  5. 1/4 c olive oil

  6. salt to taste

  7. pepper to taste

  8. Dry Rub

  9. 1 t cinnamon

  10. 1/2 t salt

  11. 1/2 t cumin

  12. 1/2 t turmeric

  13. 1/4 t cayenne

  14. 1/4 t pepper

  15. 1/4 t cardamon

  16. 1/8 t nutmeg

  17. 1/8 t chili powder

  18. 2 t brown sugar

  1. In a small bowl, combine the dry rub ingredients and mix well.

  2. Wash and cut the meat into cubes and put in a large bowl.

  3. Sprinkle the rub over the meat; mix well and let rest.

  4. Slice the onion and peppers; add to bowl.

  5. Add salt and pepper and combine all well.

  6. Heat olive oil in a large skillet or wok using high heat.

  7. Stir fry until the chicken is no longer pink and vegetables are crunchy tender.

  8. Note: A small t = teaspoon and a capital T = Tablespoon.
